Notes: I left the mushrooms out of my version of this recipe. We have food allergies in the family so we never do mushrooms. I have listed them as optional. There was also a suggestion to add a drained can of diced tomatoes if you want a tomato based stew. Also included as an option.

Simple Crock Pot Chicken Stew
The idea of a crock pot is to make your life easier. Not much is easier than this family pleasing stew. Using things you probably have on hand anyways, you spend about 10 to 15 minutes prep time and eat in 8 hours. Ingredients3 skinless boneless chicken breast - about 2 pounds - trimmed and cut into 1 inch cubes1 large onion - diced4 carrots, pealed and cut into 1 inch slices2 celery stalks diced4-5 potatoes, pealed and cut into 1 inch cubes8 oz. mushrooms, cleaned and halved-optional1 cup frozen corn2 - 14 oz cans chicken broth1 - 14 oz can diced tomatoes drained if you want a tomato based stew1 t celery seed1 t dry thyme1/2 t black pepper1 cup frozen peas
1) Prepare veggies2) Clean, trim and then cube chicken3) Place all ingredients in crock pot except peas4) Cook on low for 8 hours or high for 4 hours.5) Add peas 20-30 minutes prior to end of cooking
