Grilled slow for that fall apart tenderness of pulled pork but I don't need to cook a huge chunk of meat.
This is "the other" country style pork ribs to me. I frequently do boneless country style ribs and this is a totally different cut. The boneless is the tail end of a pork loin. It is very lean and cooks quick. This is cut from the pork shoulder (also called "Boston Butt") and has cuts of bone from the scapula. This meat is not lean but is variable because different muscles are included but much of it is like the Boston butt.

What to Take to The Weekend Picnic
So it's a big holiday picnic weekend. You're either going to a party or hosting one. So what to take or make? There is always the bag-o-chips but let's get real... this is a cooking blog. This was the question my wife asked me a few days ago and got me thinking. So I thought I would post a few suggestions.

First Group- For those hosting the party.
I'm a traditionalist so the hot dog, brots, burger and chicken breast on the grill is just great for me. But if you want something different, here are some ideas.1) BBQ Shredded Pork Loin in the Oven
An easy mass cooking that you can do ahead. Scale to any size and not much work for great return.2) Chicken for a hundred
This will take a few hours on the day of the event. But you can produce a lot of great food fast.3) Oven Baked Kansas City BBQ Beef Brisket
My all time favorite... it is almost no work with great results. Cook ahead and pop it in the oven to reheat.4) Easiest Crock Pot Shredded Chicken
An easy cook ahead mass cooking. Add BBQ sauce and have a BBQ chicken fest.
Second Group - Take a dish
I cook meat if you haven't noticed. But I have couple non-meat suggestions. A lot of baked beans and potato salad will be made and I will enjoy yours. I want to be a little different so here are two suggestions. My wife will pick one for me to do this weekend.1) Waldorf Chicken Salad
Great taste. An easy make ahead. And you will be the only one there with it. Just keep it COLD. I love crispy apple.2) Fresh Broccoli Salad

10 Minute Fried Rice
An easy fried rice recipe using Minute Rice for that "eat in" Chinese meal. A quick, use what you have on hand, recipe.
I admit to "cheating" sometimes. A food blogger is suppose to cook but normally I'm gone for 11 hours or more everyday. We occasionally use prepared meals and one of our favorite is General Tao's chicken from Sam's. Try it, it is really good for no work.

Simple Old Fashion Chicken Pot Pie
I take requests... especially if they come from my wife. It has been a chilly few weeks. Not bad but in the 50's so warm comfort food seemed called for. Chicken pot pie is one of her favorites and we had several packages of Pillsbury pie crusts left.
This is a simple old fashion style pot pie. The ATK (American Test Kitchen) recipe has 25 ingredients. I have 10. Guess which one has less work? It's got great taste that warms to the bone.

Healthy Homemade Dog Treats
Does this look like strawberry pie.... no it does not. I suffered photo failure. Somebody (me perhaps) forgot to take the pictures of the strawberries. So the doggie biscuits jumped ahead. And we get to do another strawberry pie out of this opps... ohhhhh darn.
This is a recipe for a healthier low calorie dog bone with peanut butter and pumpkin. Our golden Jake has had issues. The last two years have not been kind to Jake. First he was hit with a hereditary eye disease that lead to complete blindness in-spite of two major eye surgeries. A blown ACL with major surgery for that (a special thanks to the MSU vet school) and now a partial ACL on the other knee. So with the lack of exercise and people feeling sorry for him (us), he has gained an extra 25 pounds. I guess we are lucky he is not diabetic.

My Top 5 Mexican Recipes for Cinco de Mayo
I love Mexican food, so Cinco de Mayo is a food holiday to me and I think many of us Gringos. Contrary to common believe, it is not Mexico Independence Day (which is September 16th) but according to Mexonline "The holiday of Cinco De Mayo, The 5th Of May, commemorates the victory of the Mexican militia over the French army at The Battle Of Puebla in 1862." Ok, so I learned something.
Now on to the food. This is a top five of my Mexican recipes. Just my choice, I'm not looking at page views nor anything else. Reverse order.

Easy Chicken Fajitas
Happy almost Cinco de Mayo. Here is the "other" restaurant favorite. When I did beef fajitas, I knew that chicken wouldn't be far behind. I always go back and forth chicken or beef... beef or chicken... What to do? Your choice. But both are easy and if you care, much cheaper at home. Another candidate for house favorite recipe.
Start with chicken, clean it and cut up. Now marinade for a few hours, cook in a heavy cast iron skillet then do some veggies and you are good to go.

Grilled Brown Sugar Rubbed Turkey Breast
Turkey on the grill. This has been on my cooking "bucket list" for several years. But I'm "cooking for two" so a whole turkey is out of the question and even a frozen turkey breast is too big plus they are packed with salt water. So a smile came on my face when I found a half turkey breast at our local market that appeared to be fresh and even more of a smile when the butcher told me it was indeed a fresh breast that had not been injected with anything. It became mine...
