The “inspiration” piece is a Babble article on grilling blacken chicken. It wasn’t the spicing but the grilling method I found interesting. I have a very nice blackening spice mixture thank you very much.
The unique grilling method involves preheating the grill to maximum. And then immediately decreasing to the minimum once the chicken goes on. 6 minutes per side and perfect 165. How is that for simple?
Chicken breast variation
Now the let’s get to my qualifiers. These are from me, not the Babble article. First, we are not talking about those 1 pound turkey size chicken breasts here. We are talking the more reasonable 8 oz size. Second, a little evening out of the thickness goes a long way to even cooking.

Notes: Adjust the blackening spices to what you want. Or use the same cooking technique with any spicing you want.
Preheat grill on high. As hot as it will go. Clean and oil grates.
Trim skinless boneless chicken breast of any fat. Cover with plastic wrap. Using a meat mallet, flatten the thickest part of the breast to make thickness consistent at about 1/2 inch or a little more.
Melt butter in the microwave and brush breast. Add blackening seasoning mix to taste. But go a little heavy.
Place on the very hot grill and immediately turn heat to the minimum and lower lid. Flip in 6 minutes and cook until internal temp of 165. That was an additional 6 minutes or a total of 12 minutes on the grill for me. Your time will vary due to the chicken breasts and grill variations. Cook to the final internal temperature not by time.
