Easy and tasty for Italian night. Just dump the ingredients in the slow cooker and come back to eat.

Notes: I put in an option for some crushed red pepper. I don’t do it this time, but it would add that touch of heat. The chicken can be left whole, cut into serving sizes or about 1 hour before the end, removed and shredded and placed back if you wish.

Rinse, dry and trim three skinless boneless chicken breast (1 1/2 to 2 pounds). If you want, cut into serving size pieces.
Dice a medium onion.
To a medium to larger crock pot (this is 3.5 quart) add 3 – 6 oz cans of tomato paste and an equal amount of water. 1 – 14 oz can of diced tomatoes. 4 t dry basil, 1 t salt, 1/2 t pepper. Crush 3 cloves of garlic and the onion. Add 1/4 t crushed red pepper if you want a little heat. Mix well.
Add chicken and push down to cover.
Cook on low for 6 hours. If you like your chicken shredded, remove the breasts about 1 hour before the end, shred and place back in for the last hour.
