An easy grilled potato kabobs for grilling season. You can fix this after your meat goes on the grill. About 20 minutes total time if you presoak the skewers.

The concept is easy. Cut the potatoes into quarters. Microwave enough to mostly cook the potatoes on wooden skewers. Oil, sprinkle with salt and pepper. Then finish cooking on the grill.
A very nice grilled side dish.
Recipe notes for Grilled Potato Kabobs:
This recipe should work with most potatoes. I like the creamy texture of the Yukon Gold for this.
Obviously, due to the microwave oven use here, you should use wooden skewers only.
Potato pieces over one inch need to be precooked to get a good internal temperature on the grill. I have seen microwave or boiling as the most common methods. But if you boil, you will need to put the hot potatoes on a skewer rapidly and get them on the grill hot.
The cooking time on the grill will vary some depending on the heat and location on your grill.
Usually, the browning will be a good guide to the potatoes being done but to be sure, I suggest a quick internal temperature check. A done potato is 205-210.
Other grilled potatoes and side dishes
Soak wooden skewers in water for 30 minutes. We don’t use metal skewers due to the microwave use.
Quarter three scrubbed Yukon Gold potatoes. Threaded onto two wooden skewers leaving some space between. Place in microwave on high for 8 minutes.
Brush with oil or spray with PAM. Sprinkle with kosher salt and pepper to taste. You can add another seasoning if you wish.
Place on grill. Rotate about every 4-5 minutes. If over high heat then about 8-10 minutes total. If over medium heat then 12-15 minutes.
