Ingredients
  • 2 Skinless boneless chicken breastabout 1 1/2 lbs
  • 15oz black beansdrained
  • 1 cup cornfrozen
  • 1cup salsathick and medium spicy preferred
  • 1tablespoon chili powder
  • 1/2teaspoon cumin
  • 1/2teaspoon onion powder
  • 1/2teaspoon garlic powder
  • 1/2teaspoon pepper
  • 1teaspoon salt
  • 1/2cup sour creamoptional
Instructions
  1. Trim chicken of any trimmable fat.
  2. Drain and rinse a 15 oz can of black beans.
  3. To a smaller crock pot, add the black beans, 1 cup frozen corn, 1 cup salsa, 1 tablespoon chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon pepper and 1 teaspoon salt. Mix well
  4. Place the chicken into the mixture and spoon some on top. Cook on low for 5-6 hours.
  5. About 1 hour before the end of cooking, remove the chicken breasts and shred. Place back in the pot and finish cooking.
  6. About 5 minutes before done, optionally add 1/2 cup sour cream.
  7. Serve as you wish.
