Healthier Lemon Garlic Marinade Grilled Chicken Breasts

A wonderfully tasty lemon-garlic marinade for grilled chicken. Healthified by decreasing the fat without loosing taste.

  • 3 skinless boneless chicken breasts
  • 1/4 cup extra virgin olive oil
  • 1/2 cup ReaLemon juice
  • 6-8 cloves garlic crushed
  • 2 teaspoon seasoning salt Lowery's
  • 1/2 teaspoon black pepper


  • Trim chicken breasts. If you want, lightly score (about 1/8 inch deep) across grain every 1/2 inch on the smooth side of the breast. This will help the marinade penetrate more.
  • In a medium-size saucepan, heat 1/4 cup olive oil over medium-high heat. Add 2 tablespoons minced garlic (6 cloves) and bloom for 1 minute.
  • Add 1/2 cup ReaLemon juice, 2 teaspoon Lowery's Seasoning salt, and 1/2 teaspoon black pepper. Mix well and simmer over low heat for 2 minutes. Remove from heat. Remove about 2 tablespoons and reserve for later. Allow the marinade to cook for 5-10 minutes.
  • Add chicken breast smooth side down, stir well and be sure breasts are covered with liquid.
  • Now preheat the grill to grill surface temperature 450 degrees. About medium-high on most grills. Clean well and oil.
  • Place breasts over direct with grill lid closed and flip about every 5 minutes. On third and fourth flip re-baste the breast with the reserved marinade. Continue to cook until internal temp of 165. (about 30 minutes total cooking time)
