Healthier Mashed Potatoes

You must have mashed potatoes and gravy but let's lighten it up by a third. Decrease the butter some, add some low-fat sour cream and use low-fat milk. An easy and tasty way to cut a few calories.

  • 4 potatoes Medium pealed and cut into approximately 1 inch pieces
  • 2 teaspoons lower fat butter
  • 4 tablespoons low fat sour cream
  • 1/2 cup skim milk give or take a little
  • salt and pepper keep it light


  • Peel and cut 4 medium potatoes. Place in a medium saucepan. Add enough water cover potatoes by 1 inch and add 1 teaspoon table salt.
  • Bring to boil a high and then decrease to a simmer and partially cover. Cook until fork tender. About 18-20 minutes. Then drain water.
  • Add 2 teaspoons lower fat butter, 1/4 cup low fat sour cream, and about 1/4 cup skim milk. Mix on low with a handheld electric mixer. Add a bit more milk as needed to get the desired consistency. You will probably need about 1/2 cup. Also, salt and pepper to taste. Go light on the salt.


Nutrition is calculated on 1/4 of this recipe which is the equilivant of one medium potato. That will probably be about a cup depending on how much you whip them.
