4tablespoonslow fat sour cream
1/2cupskim milkgive or take a little

Peel and cut 4 medium potatoes. Place in a medium saucepan. Add enough water cover potatoes by 1 inch and add 1 teaspoon table salt.
Bring to boil a high and then decrease to a simmer and partially cover. Cook until fork tender. About 18-20 minutes. Then drain water.
Add 2 teaspoons lower fat butter, 1/4 cup low fat sour cream, and about 1/4 cup skim milk. Mix on low with a handheld electric mixer. Add a bit more milk as needed to get the desired consistency. You will probably need about 1/2 cup. Also, salt and pepper to taste. Go light on the salt.
Nutrition is calculated on 1/4 of this recipe which is the equilivant of one medium potato. That will probably be about a cup depending on how much you whip them.
