  • 1 pound Tilapia ( 4 filets fresh or thawed if frozen)
  • 1 cup Parmesan cheese—grated or shredded - fresh if possible
  • 1 tablespoon olive oil - or melted butter
  • 1 tablespoon paprika
  • 1 tablespoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ cup Panko breadcrumbs (optional) - to replace half the Parmesan

Step-by-Step Instructions
 

Prep the Fish

  • If using frozen tilapia, thaw completely in the refrigerator. Pat the fillets dry with paper towels. Preheat the oven to 400°F convection (or 425°F conventional).

Mix the Coating

  • Grate Parmesan if needed. In a shallow dish, combine Parmesan, paprika, parsley, salt, and pepper.

  • Bake for 10–12 minutes until the fish flakes easily with a fork and reaches an internal temperature of 145°F.

    This recipe is amazing. When I make mine I add bread crumbs to make it more crispy. Also I use the same recipe to make chicken breasts. Love it.

    Uncovered on a aluminum foil cover cooking sheet of some type. And give the foil a quick spray of pam to help prevent sticking is always a good idea but I frequently forget and it's usually fine.

    The idea is to cook high and fast. So either increase the temp to 425 on a regular oven or increase the time by a minute or two. I think I would try the increase temp first but either should work.
